Sometimes I find myself in need of converting the contents of my PDF files to MS-Excel, so I use a program called PDF2XL (their website is http://www.cogniview.com ) which is very flexible, and even includes an OCR as a bonus :)

good list. but you perhaps should include also web based tools like http://www.fillanypdf.com, they become handy when you dont have a software for filling adobe files. or are just using another’s person computer.
